Ginger Caramelized Peaches with Pistachios

INGREDIENTS
2 peaches
3/4 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1 tablespoon dark brown sugar
2 tablespoons chopped pistachios Almond or coconut whipped cream, optiona
DIRECTIONS
1. Slice peaches in half around the pit, twisting to separate the halves. Use a sharp spoon to remove the pits.
2. Sprinkle each peach half with an equal amount of the cinnamon and ginger before topping with a light layer of brown sugar. Transfer halves, cut-side-up, to the air fryer basket.
400°F air fry 5–7 mins
3. Serve each peach half topped with chopped pistachios and a dollop of whipped cream, if desired.
Mona’s Tips: Nectarines or peaches can be used interchangeably in this recipe. For firmer fruit (and less cleanup) after cooking, line the air fryer basket with parchment paper to place the peaches on top. This will slow the air flow and caramelize the tops of the peaches without fully baking the bottoms.
