INGREDIENTS
1 pound thin asparagus, stalks trimmed
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
12 slices turkey bacon
Honey Dijon Sauce
1/4 cup nonfat plain Greek yogurt
2 tablespoons Dijon mustard
1 tablespoon honey
DIRECTIONS
Preheat oven to 425°F.
Place asparagus on a sheet pan, drizzle with olive oil, and season with garlic powder, salt, and pepper. Toss until asparagus and the sheet pan are lightly coated with oil.
Tightly wrap a piece of turkey bacon around 3 pieces of asparagus and set on the sheet pan seam-side down. Repeat with the remaining asparagus.
Bake 12–15 minutes, just until bacon begins to crisp and asparagus is fork-tender.
Meanwhile, prepare the Honey Dijon Sauce by combining all ingredients in a small serving bowl. Serve alongside the wrapped asparagus for dipping.
Mona’s Tips: I like to make this with thin asparagus in bundles of 3, but thicker asparagus can be wrapped in bundles of 2.
Ingredient Insider: I always look for organic, uncured turkey bacon, as it is nitrate-free and much lower in sodium.
