Salmon Sliders with Spicy Tzatziki Sauce

INGREDIENTS
Salmon Sliders
12 oz. salmon filet, skin removed, cut into 1 inch cubes
1 egg, beaten
1 tablespoon fresh dill, chopped
3 tablespoons gluten-free bread crumbs
2 teaspoons Dijon mustard
1 tablespoon freshly grated Parmesan Cheese
2 teaspoons extra virgin oil.
Spicy Tzatziki Sauce
1/4 cup non-fat Greek plain yogurt
1 tablespoon prepared white horseradish
1 tablespoon fresh dill, chopped
1/4 cup Persian cucumber, finely diced
Salt and Pepper to Taste
10 cherry tomatoes, cut in half
DIRECTIONS
Prepare sauce by combining all ingredients, except for tomatoes, in a small bowl. Store in refrigerator while preparing salmon sliders.
In a food processor, process salmon, egg, dill, bread crumbs, dijon and Parmesan Cheese. Pulse 5 to 6 times until it has consistency of ground meat.
Form salmon mix into sliders.
In a skillet, heat olive oil Add salmon sliders into pan and brown until cooked, about 2 minutes. Flip over and brown other side for about 1-11/2 minutes.
Serve sliders with a dollop of sauce, garnished with two cherry tomato halves.
Mona’s Tips
I serve the sliders with an arugula salad and a sheet pan of roasted vegetables of broccoli and butternut squash. You can roast the cherry tomatoes with the vegetables to enhance natural sweetness for the sauce.
