Hummus Chicken with Pistachio Gremolata

INGREDIENTS
1 (14-ounce) can or jar baby artichoke hearts, drained
8 ounces green beans, ends trimmed
2 teaspoons olive oil, divided
Salt, pepper, and garlic powder
2 (6-ounce) boneless, skinless chicken breast fillets
Juice of 1/2 lemon
Oregano, dried dill, and cumin
1/4 cup hummus
Pistachio Gremolata
2 tablespoons minced pistachios
2 tablespoons minced sundried tomato
2 tablespoons minced fresh parsley
2 teaspoons minced garlic
Zest of 1/2 lemon
1 teaspoon olive oil
1/4 teaspoon pepper
DIRECTIONS
1. In a mixing bowl, toss artichoke hearts and green beans in 1 teaspoon of the olive oil and 1⁄4 teaspoon each of salt, pepper, and garlic powder. Transfer to the air fryer basket.
2. Drizzle lemon juice over chicken breasts and rub with the remaining teaspoon olive oil. Lightly season on both sides with salt, pepper, garlic powder, oregano, dried dill, and cumin.
3. Spread 2 tablespoons of hummus over top each seasoned chicken breast.
4. If you have room, place chicken beside the vegetables in the air fryer. Otherwise, place atop a metal rack over the vegetables.
375°F air fry 15–17 mins
5. Chicken is done when a meat thermometer inserted into the thickest part registers 165°F.
6. Meanwhile, prepare the pistachio gremolata by combining all ingredients. Serve over top the chicken, green beans, and artichokes.
