INGREDIENTS
1 tablespoon olive oil
2 (6 to 8-ounce) cod fillets
Salt and pepper
8 ounces mushrooms, quartered
1/2 cup sliced red onion
2 teaspoons minced garlic
1 cup cherry tomatoes
1 zucchini, chopped
1 teaspoon oregano
1/2 teaspoon thyme
1/2 teaspoon crushed red pepper flakes
1 (14-ounce) can crushed tomatoes
1/4 cup sliced green olives
3 tablespoons chopped fresh basil
1 tablespoon balsamic glaze
1 1/2 cups cooked brown rice
DIRECTIONS
Heat vegetable oil in a large skillet over medium-high heat.
Lightly season cod with salt and pepper, add to the hot skillet, and let cook for 2 minutes on each side. Remove from pan and set aside.
Add mushrooms, onions, and garlic to the skillet and sauté 2 minutes.
Add cherry tomatoes, zucchini, and Mediterranean spice mix and continue sautéing an additional 2 minutes.
Stir in crushed tomatoes and bring up to a simmer. Reduce heat to low and let simmer 5 minutes.
Stir in olives, basil, and balsamic glaze and season with salt and pepper to taste before returning fish to the pan to let cook 1 final minute. Serve over cooked brown rice.
