Apple and Apricot Kugel

INGREDIENTS
8 dashes nonstick cooking spray, or butter to coat baking pan
12-16 unces wide egg noodles
8 ounces cream cheese (can use light cream cheese)
4 tablespoons butter
16 ounces sour cream or Greek plain yogurt
1/2 cup sugar
1 1/2 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon salt
5-6 large eggs
2/3 cup dried apricots
1 apple
DIRECTIONS
Pre-heat oven to 350 degrees. Grease a 9 x 13 inch baking dish with cooking spray or butter. Boil noodles until al dente, about 5-6 mimutes. Drain.
In a large bowl, microwave cream cheese and butter 1 minute, until butter has fully melted. Stir to combine.
Whisk sour cream, sugar, vanilla extract, cinnamon, and salt into the cream cheese mixture before whisking in eggs 1 at a time.
Drain cooked egg noodles and fold into the wet ingredients in the mixing bowl. Dice the dried apricots. Peel, core, and dice apple and, along with the apricots, fold into the noodle mixture.
Transfer the noodle mixture to the greased baking dish and pat down until most noodles are submerged. Bake until bubbling and set, about 40-5- minutes, until lightly browned.
